These make an awesome snack and since zucchini is in season, it's EVERYWHERE.
These are ridiculously simple.
Slice the zucchini really really thin, I used my mandolin slicer which i love:P
Toss them in olive oil, sprinkle with seas salt, pepper and paprika. not only does the paprika taste wonderful it also helps lower blood pressure.
Now you can either fry them in a neutral oil or bake them. If you're going for super healthy bake them at 375 for about 30 minutes or getting crisp. (note: they will get soggy fast since they are mostly water.)
If you wanna fry them, do o for only a few minutes, these suckers really cook fast in the fryer. I used sunflower oil when I did ours. Also if you're going to fry them season them after you set them on a papertowel lines plate to drain them
