One of the things that caught my eye was the stuffed pork chops and the stuffed chicken breast.
I asked what it was stuffed with and the wonderful man was nice enough to tell me.
It involved apples and raisins and stuffing. Stuffing i'm okay with but not so much apples and raisins in pork. I know its a thing but I never ever did like it. So i came home, grabbed the chops I got the other day and started experimenting.
Classic seasoning:
Feeds 5
5 thick chops
1 tsp each salt, pepper, garlic powder, onion powder
Box of stuffing mix, used cornbread but use what you have or like, or make homemade stuffing ( I had some organic stuffing mix I got from trader joes)
Chicken stock
1 onion chopped small
If using a box mixed replace the water usage with chicken stock
Cut an opening in each chop, like a pocket.
Mix the stuffing with the chicken stock and let sit for a minute to absorb the stock. Add in the chopped onion and mix well.
Stuff each chop fairly well with the stuffing mix
Mix the seasoning up well and liberally season each chop. Let sit in the fridge for at least an hour.
Bake in the oven at 350 for 45 minutes to 1 hour.
Okay to make them spicy, just add some cayenne powder and possibly a little bit more pepper. Easy peasy.
