9 lasagna noodles (more if your pan is bigger)
3 cup ricotta cheese (we made our own )
3 lbs of meat, we used 1 lb sausage and 2 lbs ground beef
2 28 oz cans tomato sauce
1 large can tomato paste (not sure of the size right off hand)
3 cups shredded mozzarella cheese or Monterrey jack (this is what we used as its what was on hand)
1 tbsp minced garlic
1 tsp black pepper
1 tbsp parsley flakes
1 tbsp oregano
salt to taste
cook noodles according to package instructions
brown meat and drain any fat
add all 3 cans of tomato and add all seasonings and let simmer for 30 minutes string every 5 or so
while thats cooking take one cup of the shredded cheese and mix in with the ricotta
when sauce is done scoop about 2 cups and put on the bottom of the pan
layer 3 strips of noodles down then another 2 cups of sauce, then dollop the ricotta cheese over the sauce another layer of noodles another layer of sauce another layer of cheese one more layer of noodle and sauce then top with the rest of the shredded cheese.
pop in the oven for 30-45 minutes on 375
let sit for 10 minutes after done cooking outside the oven.
(note: you can of course add onions or use crushed tomatoes, i just make it this way so my son will eat it and add a salad to the side with some garlic toast)
BTW this makes a LARGE amount, so you will or should have some to freeze in single portions or you can feed a small army:P
