1 tomato diced
2 cloves of garlic minced
1 bell pepper julienned
3 basil leaves rolled and sliced (1 tsp dried)
1/2 sprig rosemary chopped (1/2 tsp dried)
1 sprig thyme (1/2 tsp dried)
1 tsp salt
1 tsp pepper
1 tbsp red wine vinegar
1 tbsp balsamic vinegar
a couple green onions chopped
Mix it all together well.
Cover and chill in fridge for at least 1 hour.
